Characteristics of Olive Cultivation
The cultivation of olives in Tepelena is a traditional practice that dates back to antiquity. The region’s hilly terrain, combined with a Mediterranean climate featuring mild winters and dry summers, supports the production of high-quality olives. The cultivated varieties include native types such as Nisjot, Kalinjot, and White Olive.
Production
For the extraction of extra virgin olive oil, special attention is given to the timing and method of harvesting, where traditional hand-picking techniques are used to avoid damaging the fruit. Olives are harvested when they are about 75% green and then processed in the mill using a decanter without water at a temperature below 25°C. The oil is then stored in food-grade stainless steel containers at a stable temperature of 20°C to preserve its quality and freshness.
